Some menu items take time to get right — and our brisket sandwich is one of them. Before it ever hit the Joey’s Wings menu, it lived through weeks of testing, tasting, adjusting, and more tasting. Why? Because brisket isn’t just another protein. It’s a craft.

Our brisket starts with a simple philosophy: if you want deep flavor, you have to give it time. We rub the meat with a blend of spices, add fresh vegetables, seal everything in, and let the slow-cooking work its magic for over six hours. This long cook not only tenderizes the brisket — it infuses it with a rich, clean, savory flavor that doesn’t need shortcuts or heavy oils.

Once fully cooked, the brisket is sliced and layered carefully onto a toasted French roll. Then comes our house garlic aioli, a touch of mayonnaise, and a handful of fresh arugula for brightness and balance. Every element has a purpose — from the heat of the spices to the creaminess of the aioli to the peppery bite of the greens.
